If I stocked only 6 coffees...what would they be?
Building a new website for a new brand. I'm interested in pushing the 'Farm-gate'(or similar) coffees. I like the philosophy.
Obviously, crops come and go. Current recommendations would be great. Incoming crops to look out for would be great too. Looking to cover the range of flavor profiles.
My current coffees are the same old boring WP stuff. I even produce flavored coffees.
...The Horror....The Horror...
Wish I knew more after all these years, but thats how ruts are.

Here is my $0.02USD:
With only six slots, I would ignore flavored altogether (natch).
Then, I would fill three slots with a current crop that is a classic representative of each of Central American, African/Ethiopian and Indonesian/Sumatra/Java. For example, a great coffee that is consistently avail and of quality from each of Columbian, Kenya and Sumatra.
That would leave three slots: These I would fill with the special coffees that impress, but aren't always available. E.g Yirga Cheffe, Panama Boquete, Papua New Guinea.
Of course, these are just the high level thoughts. Picking the winner for each bucket would be tough (but fun!).

3 anchors, 3 seasonal. I like it!
That offers some reliability and something fresh.
(I'm flexible with the overall count)
I'd love to see a vote for the real stand-out crops. Has that been done? -Scott

Smatty1 - Did the Ethiopia Harrar turn out as good as it smelled? I have only had two Harrar's in my short coffee roasting lifetime....and while they were both good, they were not 'jaw dropping' wonderful. So I am still looking for that fabled blueberry bomb Harrar.....
What's been in my roaster....evidence of a seasonal Columbia Tolima addiction!
Most of these coffees have been previously roasted and posted about on this thread - so I will spare everyone my long winded roasting and tasting notes.
All are from Sweet Maria's and were roasted on average for 9:10- 9:30 minutes, with an average first crack at 7 - 7:30 minutes.
Colombia "Dos Payasos de Tolima"
Colombia Tolima Florestales -Maximinio Gutierrez
Colombia Planadas Tolima Roberto Rojas Microlot
Colombia Tolima Merediano Microlot
Colombia "Platos Fuertes de Huila" MicroLot Mix
All of these coffees seem to have a honey sweetness and loads of white fruits ranging from apples to peaches. A few even have some strawberry jam notes-especially the Florestales. These are my 'hot Spring and Summer Days' type of coffees because they are filled with refreshing fruit flavors.

Well, I can hear CHAD chortling already, but... I somehow allowed us to drink all of the fresh homeroast and deplete the freezer stash-- so we've been forced to drink 8-o'clock '100% Columbian'...
So today, even though it was 93F in the 'shack', I roasted five pounds, which should hold us for a while.
1# Brazil Moreninha Formosa "Raisin" Coffee, from CHAD
2# Colombia "Dos Payasos de Tolima", from SM
2# Sumatra TP from GCBC |

It is awesome, but not jaw dropping. And more earthy and sweet than fruity. The legend of the blueberry harrar of 10 yrs ago has yet to come back to life!

Bill - I would love to hear your tasting notes on both the Brazil Moreninha Formosa "Raisin" Coffee and the Dos Payasos de Tolima. I am quite familiar with both coffees but always interested hear what others 'taste'.
Reduced to drinking 8-O'Clock....what a tragedy.
Smatty1 - Thanks for the elaboration on the Harrar. I am intrigued by the 'legend of the blueberry Harrar'. It has become a sort of Holy Grail type quest for me....so let me know if you ever find it (or anything close to it).
What is in my roaster..
Nicaragua SHG EP - Coffee Bean Corral. Roasted for 9:40 minutes, first crack at 7:00 min. Loads of semi sweet baker's chocolate covered raisins. A hint of currants too.
Java Kajumas Organic Wet-Hulled - Sweet Maria's. I roasted this for 10:20 min, first crack at 7:35 min. This roast was different from my previous roasts in that I let the beans stay in the 420-430 range 10+ seconds longer than in previous roasts.
The beans were slightly darker...and in the cup the roast change was noticeable. Normally there is a hummus, nut, and caramel flavor profile. This time there was a sweet straw note on top of the normal flavor profile. The straw flavor reminded me of a Monsooned Malabar..but more mellow. I am amazed how much a little change in the roasting profile had such a huge impact.
Has anyone else roasted the Java Kajumas Organic Wet-Hulled? I would love to hear how you roasted it and what you tasted in the cup. |

The most intense blueberry bomb was the fabled Ethiopian Korate of the year before last! A coffee that was deserving of the nickname "Blueberry Cobbler"! This was the best coffee I have ever had the pleasure of drinking Tom @ sweet maria's says maybe next year when some of the kinks are likely worked out of the Ethiopian coffee debacle! |

Guatamalan Oriente Dry Process! Top of the list of my all time favorite coffees! Now I'm down to 1/2 lb. Here's hoping we see some more of this stuff some day! |

Smatty1 -Thanks for the recommendation of the Ethiopian Karate blueberry bomb. I have put it on my wish list and will keep an eye out for it on Sweet Maria's sometime next year.
What's in my roaster:
Honduras Cup of Excellence -Finca Fernandez - Sweet Maria's - Golden raisins, honey, a hint of pear and maybe some nuts. Compared to all of the Columbia Tolimas I have been drinking lately, this does not seem very sweet....BUT in its own right, it is actually fairly sweet.

Mexican Altura and my second roast of some Kone that I was lucky enough to receive in the mail from a friend in Hawaii.
This roast of the Kona I didn't let it get into second crack like the forst one did the color of the beans is in my opinion a city roast, maybe a city +.
Will just have to wait and see how it turns out.
The mexican I know from previous roast that it will be all Chocolate, it will start out in the cup as a deep dark chocolate and mellow out to milk chocolate when its cold, I really like to drink this one when its completely cold the chocolate taste is so good.
thats what was in my roaster today, now I gotta go get the roaster back in the cabinet till next time.

well at the moment there isn't anything in it, but the sun comes up and its gonna be a race to see which bean jumps in there first, cause I'm a flat sure outta da roasted bean, but Im leaning real heavely towards some Ethiopian that I have stashed under the counter in the kitchen.
and just might as a treat do up some Kona, and a little splash of some of that wonderful Mexican that I was fortunate enough to have the Seedling offer to me in one of his BIG Bag Buy's. I really like getting ot participate in those when you do one Chad.
Anyone know if Ethiopia strightened out their goverment reg's on coffee yet, so we can get back to something like a nice Misty Valley??????

I can tell you this much don't leave your roaster on winter setting when its 97 outside,
Nebighors haven't seen that much smoke since I set the yard on fire awhile back.

Within the last year I was turned on the the Guatamalans. Thanksfully. I will have to keep my eye out for this one. Let us know if you spy some come on the market.
So many coffess ... I need to retire just so I can roast and cup more. |

Jimbo - I am deeply jealous of your Ethiopia DP Haile Selassie stash. I roasted the last of mine a month ago or so.
The summer love affair continues with Columbian Tolima coffees..won't repost them since they are repeats of prior roasts posted on here by me!
New coffees roasted recently - all from Sweet Maria's
Colombia - Los Chuchos de Tolima - currants or raisins, black fig and some nuts. Oolong tea or maybe even green apple skin aftertaste. Roasted 9:18 min, hit first crack at 7:21 min.
Costa Rica Lourdes de Naranjo -Finca Genesis - Tom's cupping notes are spot on..including the honey lemonade flavors. Very sweet full of berry, lemonade, and honey notes. Roasted 9:28 min, first crack at 6:58 min.
Costa Rica Chirripo -Finca Alaska - Sugar cane and honey sweetness. The first 24 hrs after roast there is a toasted marshmellow note. After 48 hrs it moves to the background...and at 5 days it is barely there. Really interesting and good! Roasted 9:20 min, first crack at 7:19 min.
Well that's all the new coffees for now.... |

Bali Organic Natural Kintamini and Mexican Organic Terrano Natural.
Both smell incredibly yummy off of roast. I think I nailed the Bali roast. C1 was 2 mins earlier than most other roasts I've done. Never seen a coffee hit C1 so soon. I had roasted this before (different vendor) so I knew that oily comes fast. Hit cooldown @ 2 mins after temp redux/C1. |
