As long as your inlet and outlet are dead-on center it might work fine. If not, you might get more flow around one side versus the other which would cause uneven exchange and hot spots. My own preference would be to have the air flow across the element face as it does as a space heater which would better guarantee even exchange.

Unless the plastic you're referring to is good up to oven temps I would get rid of the plastic. Even with that area blocked off, it's going to get toasty in the middle.
