I have been trying Scott Rao Hario V60 pourover this week. 1:17 and blooming with 2 parts water the first 45 seconds then splitting the rest into 2 pours. A little stirring is included. We like it.

My brew ratio is 1:17 (exactly 59.5 g/L). That's roughly 8.5g per 5-oz cup.

When your wife thinks 30 grams for a 6 cup setting is strong, you learn to drink muddy water when you are making coffee for both of you.

I use a rule of thumb of 60 grams per liter. 8 cups (1 liter, 32 oz) = 60 grams, 6 cups (3/4 liter, 24 oz) = 45 grams. 10 cups = 75 grams 12 cups = 90 grams

Originally from Michigan, I began working for Intelligentsia Coffee & Tea four years ago packing coffee bags on the production floor. With the opportunity for a little training with a colleague, I decided to compete in the Great Lakes regional barista competition and placed 4th despite no experience behind the bar. 5 years later, I am the Assistant Director of Education at Intelligentsia Coffee & Tea, have won the United States Barista Competition two years in a row and placed third last year in Atlanta’s competition.

This has been some great stuff. (most of the time). It is great to see some baristas with a working knowledge of the actual farming and processing that elads to their final product.

What is your signiture drink?

Mine is a layed shot that brings the best of vietnemese style coffee perfectly fused with classic cappuccino traditions - with a finishing hint of toasted almonds.

Update

Australia won the best coffee nation title as it's based on the ranking of all 5 competitions.

1] 3rd in the barista comp
2] 2nd in the latte art comp
3] 6th in the cup tasting comp
4] 4th in the good spirits comp
5] 12th in the Cezve/Ibrik (turkish coffee) comp

So overall Australia finished as top of all nations that entered a competitor in each comp.
