Regarding the pre-yellow stage
Big B
After finding this post I have been experimenting with the "drying" phase and thought I would share some observations.

Also wondering what others are learning...

I have found for the softer beans and/or lighter roasts a longer time to yellow (4 to 5+ minutes) has made a big difference in the overall cup character, compared with previous faster starts of the same beans. The most noticeable was with a Kona... the first roasts with a under 3 minute drying phase produced a very disappointing cup. The longer time (almost 6 minutes) improved the cup to some of the best coffee I have roasted to date.

My harder beans/darker roasts I find are developing more body and deeper flavors if I speed up the drying phase, then slow down the post 1st crack phase to finish.

Not sure why, but think it has to do mostly with bean moisture content.
It's only as good as you make it...

Excellent observations B. I've noticed very much the same thing (except soft brazil, not Kona... can't afford that stuff).

Big B, what type of roaster do you use?
Interesting observations, thanks! -Scott

My roaster is a Weber grill and a Wagner heat gun.

Chad, I've found top quality Kona Peaberry for $12.99 lb, plus shipping (or I wouldn't be buying it either).

Now, see, I love great coffee, but I so much like good coffee that I'd rather have 4 pounds of something good. In other words, $12.99 is too rich for my blood.
