Today I am enjoying a great Costa Rica Helsar de Zarcero on a 4 day rest. I made a drip pot of this the morning after the roast (FC) and it was quite bright! Today, done via my favorite method - pour over, the brightness is much more subtle. In my opinion this is vastly improved over the early brew.

The citrus remains although less pronounced, and the chocolate and sweetness really comes out today.

This is life!
