Taste between aged 2+yr beans and greener beans

Hi, as mentioned i got from a supplier some guatemala antigua beans. the appearance appears more light brown. i have been roasting it and cupping , seem alright. recently i got from another supplier also Guatemala antigua , more expensive by 7 buck. it is from a supplier Camec. after roasting, i could taste the difference. the camec beans are more 'forceful' in aroma, more aggressive with the aroma going up well up my nasal. while the supposed aged antigua from 1st supplier semed to pale by comparison, though the taste in simila but the aroma seemed more muted. is that characteristic of aged beans?? |

Hello: I need to first ask you who said the beans were aged? You make no mention of either bean being aged. Clearly beans from different suppliers will be very different. Price is not always the best factor to use in a bean being better or worse. Frankly reputation of said supplier would be a big factor in buying their beans or not... where are you living? it helps if we have some information so that we can lead you in the right direction. if you are in the USA order a sample pack from Sweet Maria's and taste a variety of excellent beans. How are you roasting these beans? ginny |

Have the beans been sitting in a jute bag for 2 years in a warehouse, or were they intentionally aged as a Monsooned Malabar is intentionally aged? I haven't heard of aged Guatemala beans before. CHAD Roaster: CoffeeAir II 2# DIY air roaster

In Singapore you should be able to find a local roaster and buy some green beans. How are you roasting, what are you using to roast with? g |

i did. the 2 set of beans i mention are green beans which i roasted. roasted with gene cafe with default profile mention - 242 degC til 1C then lower to 236degC til kiss of 2C ~15min in all Quote ginny wrote: In Singapore you should be able to find a local roaster and buy some green beans.
