The drip process right now is 40-45g/L with water temps at about 180......no bueno! The upside is when we bring in the beans Feb. 1, we will not have to do much improve quality. I was playing with the Idea of keeping a right angle to the pitcher already, looks like I just need to keep the steam wand tip submerged. Thanks KK! Greg, come on up this spring. We will be getting things converted and getting the coffee program refined over the next few months. I find that I like my drip coffees in the 65g/l range, some lower some a bit higher. I'm trying waaaaay too hard!!! My Nuova Simonelli has a 4 hole steam wand. I can bring a quart of water to a boil in half the time it takes on stovetop or microwave using this wand. I know some have been interested in what I have run into with this cafe. I hope to be able to get into it a bit more with some before and after pics next week. Lately I have been renovating. Two of us really, for the last 8 days. attached are some pics of the new bar, which is concrete and some new wall construction. It has been a lot of loooooong days and nights getting through these changes but we are almost there. The Runner Stone Market and Cafe is closing in on a grand opening party towards the end of this month. Cheers, Sean

A little more up hill running. Just trim, paint and the dreaded cleaning left. We are open for business tomorrow. We did pour them in place, it was the only way to be able to keep the entire top as one piece. Finished by hand :) AT- We don't currently roast on site, though there are plans to do so in the future.
