aroma dat goes up ur nostrils diff between aged and no aged beans

does aged beans have a more mellow less aggressive aroma compared to non aged beans. i roasted 2 natch of kenya , 1 aged and 1 non aged ( from diff supplier) and found the one dat is not aged having the 'in yojur nostril aroma' than the aged ones

Do you mean aged green coffee beans or do you mean roasted coffee that has aged?

The aging process drops acidity tremendously. This means less floral or fruity aromas, and a stronger overall aroma, yes. An aged bean will need more rest after roasting, perhaps up to 2 weeks of rest to get the best flavors.
