Saudi coffee, or Al-Qahwa, is cooked (not brewed) from green coffee beans and is a traditional drink in Arabian culture. This page describes how to make it. Actually, this is wide spread misunderstanding about Saudi (Arabian) coffee. We never drink it with green beans. The beans are lightly roasted to taste. Roasting level ranges from yellow tan (165 C) to 1st crack (210 C). It's a very light roast, but never green. The misconception that it is made with green beans is due to the colour of cardamom, safran and lightly roasted beans when it's served light (watered down). In the old fashioned way, it's roasted on the spot, ground, brewed and served in front of guests. Here are some videos of the process: |

Wow, I was going to try this recipe, but at the end it says it has to be served in Arabic coffee cups, so I'm going to have to wait until I can find some of those. Grrr. Oh, I'll have to get some Coffeemate Powder too, who keeps that around? |
