This stuff smells like apple cider as green beans. It is dried in the cherry under strict care. If you know much about this, it is extremely risky to ruin coffee doing it this way, so the risk was chosen due to the incredible reward.
Roasted light, this stuff could peel the paint off the wall with acidity and sourness. Just under second crack or slightly into second crack allows a balance between the very berry /chocloate flavor and aroma, and the roasty, slurpy coffee I like. So far, those I"ve shared it with love it. I will be sad when it's gone.
