Which option is better.

I need your advice, for 500gr fluid bed roaster, shall I buy Aurdino UNO -TC4C or use Fuji PXR4 to control the profile. which option is more practical. or which one you will use in case you want build new roaster. considering currently I am using MASTECH MS6514 Dual Channel Digital Thermometer with BreadMaker.

It deppends on your desired roasting process, your DIY skills and willingness to work with potentially lethal voltage.
Both units are capable of monitoring the temp and controlling the heat input - either manually or by following a desired profile (ramp/soak or full background profile).
The TC4 is also capable of controlling the fan output - again either manually or you can automate it through a set of events/alarms. It also gives you the ability to monitor up to 4 different temperatures and it is also a bit cheaper. On the other hand you have to be able to put it all together, work with high voltage, upload and modify the Arduino sketch etc.
If you are OK with all this and your desire is to have a machine capable of automated roasts, go with the TC4. I went this way in my fluidbed build and would do it again. If you want to avoid the Arduino and get a somewhat standalone unit go with the FUJI.
