Thanks for the addition to the group. Seriously considering building a drum roaster along the lines of oldgrumpus's. Love the design and craftsmanship.

Mexican Chiapas anyone?
kwrcst
So I am looking for something to blend with my Mexican Chiapas. I generally take it deep into second crack for my Espresso and it works well. It feels like it is missing something that I can't put my finger on. I like the chocolate flavors and rich caramels but this just isn't ringing the bell for me. Don't get me wrong, I will drink this every day of the week as is but I would like to see something more. I'm open to suggestions.

Hola amigo! I live in Mexico & am a fan of Chiapaneco coffe as well. I drink expresso, however generally I do not roast for expresso as my final brewing method .. therefore I do not know how much my opinion will count. Personally I enjoy a blend of darker roast Chiapas with a medium-Italian roast from Oaxaca (caf? pluma variety). This adds a subtle but noticeable improvement in flavor and aroma and offers an increased flavor profile with chocolate, vanilla and carmel undertones.

Always one of my favorites.
