Most people think of sour as the same as acidic, as in lemon juice. Actually, sauer means to ferment!

Dan. I am pretty sure that too cold of water brings sour flavors as opposed to bright acidic flavors. The acidity is in the beans itself.

KB, you could right. Consensus says bitter is from water too hot, bright from water too cold. Can't be both at same time!

Usually the bitter flavors are more subtle, though, in shots like that. There but not intensely there.

That is strange to me Dan. I have pulled quite a few shots that contained both bitters and acidity.
