Hi Erik and welcome to Homeroasters! I like to pull out the lower tech roasters without thermometry and motors as often as possible to see if I'm able to still produce a good roast with them and while they don't always turn out stellar, neither do my high tech roasters. I enjoy the low tech more than on my tricked out drum roaster any day just because of the closer connection to the sights, sounds and aromas.
