I thought the main reason of our hobby, roasting coffee, is exactly for this purpose: having fresh roasted coffee when we want...
Storing coffee, whatever method, denies the fresh term in the above statement.
Why would I store when I can roast a new batch... Grin

I am sure that there are home roasters that roast more than for immediate use.
Waking Life, a bre shop that used to be in Asheville, would vacuum seal and freeze exceptional roasts. And bring them out at a later time. Excellent Deja Vu experience.
