What could I be doing that's making my roasts come out bitter?

My roasts are coming out bitter and it's really annoying me. I'm using a bread maker for roasting (modified) and a thermocouple for temps. It's gotten to the point where I cringe drinking my own coffee sometimes...

Need more details in order to troubleshoot...

How do you brew your coffee and do you get the same results with coffee you buy from someone else, already roasted?

Method
Grinder
Amount of coffee
Amount of water
Water temperature

How does a typical roast go for you?

How much are you trying to roast
Drying time/time to yellow/temperature
Time to first crack/temperature
Time from the beginning of first crack until you finish/temperature

how long is your average roast, what are the temps etc...

Offhand, you're not resting your coffee long enough before drinking it.
