Coffee tastes flat

Hello. I am new to coffee roasting and started with the popcorn popper. I mod it using power supply, dc speed controller and dimmer for the heat control.
Well, i roast some coffee (100g), i try to rise the temp from 130c to 215c every min or so, with FC around 9m30sec and 12min end of roast. Waiting 2 days for the coffee to degas, but in the cup it tastes blunt. What am i doing wrong?

For my taste I personally degas for a minimum of 5 days

Roast faster, fluid bed is a machine that not likes longer roasts.
Start at 150C at least, better 175 C, and rise to 240 C in maximum 4 minutes. So you should bring FC in the 6-7 minutes ballpark, and finish in the minute 8-10.

Degassing is for espresso mainly, cupping is performed usually hours after roast and find there all the flavors, and some of them will vanish after three days of storage.

I will try to bring FC faster and see results. Then i come back with an update

I am having the same issue. I get perfect smells but the coffee is just flat with a hit of acid. My Ethiopian smells like citrus, my Brazilian smells like chocolate. They both taste the exact same. Ethiopian first crack at about 6:15 pulled at around 7:45. Brazilian was a 12oz sample roasted in an artisan 2.5 so fc at 5:15-5:30 and finished at 8:15.. just frustrating that all I am tasting is basically a hit of acid in dirty water, not at all a good cup. I've tried every brewing method but cold.

Ethiopian is now 9 days old, smell has gotten better all along but the flavor hasn't changed very much.
