Scott Rao and Browning Phase with Artisan
oldgrumpus
I'm not particularly technical when it comes to software and the deeper capabilities of Artisan roast logging software (which is what I use). But I do love Artisan and the way it shows me what percent of roasting time is spent in the different phases, but it seems to me that it should be able to read out in real-time while roasting during the last phase. The parameters that Scott Rao suggests for the browning phase could be "nailed" every time. His recommendation is 20-25 percent in the last phase which, for me, has been a bit of a crap-shoot. To achieve 20% during the end phase, it means 80% would be achieved when first crack is reached. At that point, a prediction can be made for a time-based bean drop.

If 25% of the time spent in the last phase is the goal, then the first crack time is equal to 75% of the roast.

If anyone knows how to get Artisan to readout percentage in the last phase to be in real time, please post it here. Preferably in simple language.

I have created a spread sheet to refer to with regards to this question. When I get confirmation on my first crack time marker, I can look at the chart and see a time for the drop. The spreadsheet shows 3 times, one for 20%, one for 22-1/2% and one for 25%. It's not an Artisan solution, but it'll work till I can get an answer regarding my software question...

If I understand what you are asking, you can try this if you haven't already. See the image for reference.

Select Config, then Phases, then select Percentage from the drop-down menus

Also, be sure to set your machine's relevant Drying, Maillard, and Finishing temperatures.

My drop downs are set to "temperature". Are you saying that if they are set to percentage, that it will display in real time during the roast?

Mine looks like this before changing anything.

Just clicking the phases LCDs with the right mouse button switches from time to percentage mode

Yes, they should. You'll have to tick the box for "Phases LCDs" on the Phases menu for them to display while roasting.

Thanks all! I'll make the changes and try it out!

Correct. The LCDs will cycle through each of the modes with right clicks.

Another way: check the box under Phases LCDs All on the Phases dialog. When FCs is recorded the Phase LCDs will change to show the time since FCs, the temperature rise above FCs and the development time ratio as a percent.

Want to plot the development time ratio as a curve so after the roast is complete you can look back to see what it was at all times after FCs? That is possible too. Also, events can be annotated to show the development time ratio at the time when when they changed.

These methods and others are explained in the Artisan blog post Displaying Development Time Ratio in Artisan. https://artisan-r...io-in.html

Thanks much zeece! I must say that the link you gave me here is perfect. I love that he gives the simple basics right at the beginning and how he gets into the details later on for the more advanced users of Artisan.
